Manicotti are a type of pasta used in Italian American cooking. Manicotti are very big, often smooth pasta tubes that are meant to be filled and baked. Ricotta cheese is typically blended with cooked, chopped spinach and other ingredients, such as ground veal, although strictly meat filling refers to cannelloni rather than manicotti. Tomato sauce is then placed on top of them.
