The chile relleno is a Mexican dish that originated in Puebla. It was first described as a “green chile pepper stuffed with minced meat and coated with eggs” in 1858. Puebla’s poblano pepper is the most commonly used pepper, but New Mexico chile, pasilla, and even jalapeo peppers are also popular. It is typically stuffed with melted cheese, such as queso Chihuahua or queso Oaxaca, or with picadillo meat, which is made of diced pork, raisins, and nuts and seasoned with canella; covered in an egg white batter, simply corn masa flour and fried, or without any batter at all. Although it is frequently served with a tomato sauce, the sauces can differ.
